South Indian Lunch Box Specials - Curd and Lemon Rice Recipes

INDIAN LUNCH SPECIALS

Indian foods are always tasty treat to everyone. Here are some lunch specialties that are very common in south Indian houses. Here we go:

1. Curd rice.

Ingredients:

Cooked rice and mashed -2 cups

Curd-2 tbsp

Milk - required quantity

Salt and oil for seasoning

For the seasoning:

Mustard seeds 1/2 half tsp

Broken urad dhal-1 tsp

Dried red chilli-1 Cut in to pieces

Curry leaves 2 sprigs

Method of preparation:

Pour oil in a kadai and add mustard seeds. When mustard seeds splutter add broken urad dhal and fry till it becomes golden brown in color. Now cut dried red chilies in to pieces and add to it. Fry it and add curry leaves and remove from fire.

Add required salt to the mashed rice and pour the seasoning into the rice. Allow it to cool for some time. When it is done, add required milk and mix well. The consistency should be checked. Finally add curd and mix it well.

This rice can be taken as lunch box along with Indian mango or lime pickles.

If you wanted to eat immediately, skip milk and instead add more curd.

Tasty curd rice is ready to serve.

2. LEMON RICE

Ingredients:

Basmathi rice cooked-2 cups

Lime - 1 (small) oil for seasoning

Salt required quantity

For the seasoning:

Mustard seeds 1/2 half tsps

Broken urad dhal-1 tsp

Dried red chilli -1 Cut in to pieces

Curry leaves 2 sprigs

Turmeric powder - half spoon

Method of Preparation:

In a kadai add oil, put 1 tsp of mustard seeds. .When mustard seeds splutter add broken urad dhal and fry till it becomes golden brown in color. Now cut dried red chilies in to pieces and add to it. Now add turmeric powder in to it. Then add curry leaves and remove from fire.

When the seasoning gets cooled squeeze one lemon and add require salt and turmeric powder.

Spread the rice in a wide plate and allow it to coll. Once it is cool add the rice to the seasoning and mix it well. Garnish with fried groundnuts and serve with pickle.

Tasty Lemon rice is ready.

Tips for a good curd rice and lemon rice:

If you are taking curd rice for your lunch box, use less curd. Also if the climate is very chill, don’t use milk while making curd rice, even for the box.

Do not squeeze the lime when the oil is still hot. It will give a bitter taste to lemon rice and spoil the flavor.
